Ham and Cheese Spätzli

Recipe:

  • Mix until a smooth batter that falls in pieces from the spatula is obtained:
    • 300g flour
    • 2 eggs
    • 2.5 dl milk
    • 1 tsp salt
  • Add milk if necessary.
  • Let rest for at least half an hour in the fridge, covered.
  • Bring salted water to a boil in a large pot.
  • Pass the batter in portions through a Spätzli maker, or through a colander with large holes, letting them fall into the boiling water.
  • Skim the Spätzli once they rise to the surface.
  • In a little oil, sauté a finely chopped onion, set aside. In the same pan, sauté the Spätzli over high heat. Once grilled, reduce the heat to minimum, add the onions, diced cooked ham, and pepper. Mix well.
  • Cover with grated cheese (choose a melting cheese like raclette cheese), and cover.
  • You can poach the Spätzli the day before and keep them in the fridge, grilling them only at the last moment.
  • Serve with a lamb's lettuce salad with walnut oil
  • And a glass of Dôle Les Fleurs, naturally!
