Brasserie C is located in the very heart of historic Liège. When the fine weather arrives, enthusiasts can enjoy their favourite beers on the magnificent terrace adjoining the restaurant and located just above the brewery. It was in this magical setting that our two friends agreed to answer our questions, each with a beer in hand: Echappée for one and Curtius for the other.
For which beer would you be willing to do something crazy?
Without a doubt, for Echappée. It is one of our finest achievements: a beer with perfect balance, both modern and respectful of its origins. It is a beer for which we are prepared to take long detours all the way to Valais to pick up a few bottles.
The best time of day to drink a beer?
Certainly after a long day’s work in the brewery on a hot summer day.
The worst time of day to drink a beer?
That is a difficult question! 😉 But by default, after the first coffee of the morning (unless it is to taste a good stout).
A memorable moment (good or bad) from your early days as brewers?
We were self-taught brewers; we have never worked in any brewery other than our own, so there are quite a few memorable anecdotes and small mistakes. And we have lost count of the number of uncontrolled hops eruptions that repainted all or part of the brewery!
You and beer in ten years?
We have been in the brewing world for 10 years, and when you see how far we have come and all the wonderful things that have happened to us, it is a little hard to know how far beer will take us... But it will probably make us travel... perhaps even beyond Europe’s borders.
Do you like wine? Do you drink it? If so, which one?
We love wine; we are becoming increasingly interested in it and we enjoy a wide variety. From a technological standpoint, our professions are closely related, and it is always very enriching for us to share our know-how and experiences with winegrowers or oenologists. We particularly enjoy Italian wines—Primitivo, Barbaresco—as well as Chardonnay from Burgundy. But the wine we most enjoy coming back to is, without a doubt, a Petite Arvine Château Lichten!
