Fish accras with green beans

Serves 2 to 4 people, depending on whether it is served as a main course or an appetizer.

Finely blend:

  • 300 g raw white fish (plaice, cod, etc.)
  • 1 large handful of blanched green beans
  • 1 garlic clove
  • 1 egg
  • 1 tbsp fish sauce
  • 1 to 2 tbsp flour, depending on consistency
  • A pinch of chili

Form small balls using two spoons and fry for a few minutes.

Serve with a salad or asparagus when in season, tabbouleh, and a sweet and sour sauce with a dash of vinegar.

Mix two parts sweet and sour sauce with one part herb vinegar.
