For a 26 cm diameter pan
Crust:
- Mix 160 g flour, 80 g cold butter in pieces, a pinch of salt, and approx. ½ dl water (add more water as needed) until a smooth dough is obtained.
- Let rest in the refrigerator for at least 30 min.
Filling:
- Mix 2 eggs, 1.5 dl cream, 1 packet of vanilla sugar (or the seeds of one vanilla bean), 1 tbsp sugar
Tart:
- Roll out the dough,
- Scatter approx. 100 g of cooking chocolate in small pieces, ensuring the pieces cover the entire bottom.
- Peel two pears (depending on their size), cut them into slices or quarters that are not too thick.
- Arrange them on the chocolate and pour the filling over them.
Baking:
- approx. 35 min at 200°C
Serve warm, the chocolate will remain melted, it's even better! Pair this dessert with a Grains Nobles.
