Serves 2 to 4 people, depending on whether it is served as a main course or an appetizer.
Finely blend:
- 300 g raw white fish (plaice, cod, etc.)
- 1 large handful of blanched green beans
- 1 garlic clove
- 1 egg
- 1 tbsp fish sauce
- 1 to 2 tbsp flour, depending on consistency
- A pinch of chili
Form small balls using two spoons and fry for a few minutes.
Serve with a salad or asparagus when in season, tabbouleh, and a sweet and sour sauce with a dash of vinegar.
Mix two parts sweet and sour sauce with one part herb vinegar.
