This pea soup is best enjoyed with <a href=\"https:\/\/shop.famillerouvinez.com\/products\/heida-les-fleurs-aoc-valais\" target=\"_blank\" rel=\"noopener\">Heida Les Fleurs<\/a>, whose freshness harmonises perfectly with the soup\u2019s velvety texture. <\/p>\n\n<h2 class=\"wp-block-heading\"><strong>Starter for 4 people<\/strong><\/h2>\n\n<ul class=\"wp-block-list\">\n<li>Roughly chop one to two shallots and a large clove of garlic, then saut\u00e9 them in a wok with a little oil.<\/li>\n\n\n\n<li>Add 250 g of peas (fresh or frozen) and saut\u00e9 briefly.<\/li>\n\n\n\n<li>Add approx. 1 dl of water, 1 tsp vegetable stock, pepper and a pinch of chilli.<\/li>\n\n\n\n<li>Simmer covered until the peas are tender, adding water if necessary. At the end, add about ten coriander leaves. <\/li>\n\n\n\n<li>Blend everything<\/li>\n\n\n\n<li>Add a generous tbsp of cr\u00e8me fra\u00eeche, and water if necessary.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">Reheat in the same wok and adjust the seasoning.<br\/>Garnish with a little cress and serve with ham crisps.<\/p>\n\n<h3 class=\"wp-block-heading\"><strong>Ham crisps<\/strong><\/h3>\n\n<p class=\"wp-block-paragraph\">Place a few extra-thin slices of cured ham under your oven grill. Grill for 3\u20134 minutes until crispy.
