Originally from Belgium, the term \"carbonade\" comes from the word \"charcoal\", as this dish used to be simmered for a long time over charcoal embers. Of course, a stainless-steel or enamelled cast-iron casserole with a lid will work just as well!  <\/p>\n\n<p class=\"wp-block-paragraph\">Ideally, prepare it the day before, or even 2 days ahead\u2014it is even better!<\/p>\n\n<h2 class=\"wp-block-heading\">Ingredients for 4 to 5 people:<\/h2>\n\n<ul class=\"wp-block-list\">\n<li>1 kg boneless beef shank<\/li>\n\n\n\n<li>200 g smoked bacon for grilling<\/li>\n\n\n\n<li>1 tbsp oil<\/li>\n\n\n\n<li>2 onions<\/li>\n\n\n\n<li>30 g butter<\/li>\n\n\n\n<li>75 cl Belgian beer; Echapp\u00e9e will work wonders<\/li>\n\n\n\n<li>1 tbsp brown sugar (available in supermarkets)<\/li>\n\n\n\n<li>1 tbsp flour<\/li>\n\n\n\n<li>4 slices of gingerbread<\/li>\n\n\n\n<li>Salt and pepper<\/li>\n<\/ul>\n\n<h2 class=\"wp-block-heading\">Recipe:<\/h2>\n\n<ul class=\"wp-block-list\">\n<li>Cut the meat into pieces, taking care to remove excess fat.<\/li>\n\n\n\n<li>Quickly sear the meat, remove it from the casserole, and melt the butter in it.<\/li>\n\n\n\n<li>Add the onions sliced into strips and let them sweat, stirring from time to time.<\/li>\n\n\n\n<li>Add the brown sugar and the smoked bacon cut into small pieces.<\/li>\n\n\n\n<li>Season with salt and pepper.<\/li>\n\n\n\n<li>Once the water has evaporated, add the meat and its juices.<\/li>\n\n\n\n<li>Add 1 tbsp flour over the meat, then mix well.<\/li>\n\n\n\n<li>Add the beer; the meat should be covered.<\/li>\n\n\n\n<li>Add the gingerbread to the casserole.<\/li>\n\n\n\n<li>Bring everything to the boil, then lower the heat, cover with the lid, and let simmer for 2 hours 30 minutes.<\/li>\n\n\n\n<li>Stir the dish every 20 to 30 minutes.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">The next day, reheat over low heat for 1 hour.<\/p>\n\n<p class=\"wp-block-paragraph\">To accompany this Belgian dish: fries and <a href=\"https:\/\/shop.famillerouvinez.com\/collections\/bieres\/products\/lechappee-originale\" target=\"_blank\" rel=\"noreferrer noopener\">Echapp\u00e9e<\/a>\u2026 once!<br\/>And to add a little colour, add a few carrots at the same time as the onions.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>We offer you a dish in tribute to our Belgian roots, one of the must-haves of the Low Countries, which appears on our table a few times a year.
