Time does not transform a mediocre wine into a grand cru: it simply reveals and adds complexity to the qualities already present. <\/p>\n\n<p class=\"wp-block-paragraph\">In red wines, tannins often ensure longevity. Powerful at the start, they gain finesse and elegance over time. In white wines, acidity plays an essential role: it allows the wine to maintain freshness and tension over the years.  <\/p>\n\n<h2 class=\"wp-block-heading\">Sweet wines: the champions of aging<\/h2>\n\n<p class=\"wp-block-paragraph\">Among the wines most suitable for aging, sweet wines occupy a special place. Their high sugar concentration acts as a natural preservative, allowing them to evolve very slowly and develop aromas of great complexity. <\/p>\n\n<h2 class=\"wp-block-heading\">The right time to open a bottle<\/h2>\n\n<p class=\"wp-block-paragraph\">Learning to know a wine for cellaring requires time and curiosity.
