Playful, gourmet, and spectacular at the moment of service, this frozen chocolate parfait seduces as much by its taste as by its originality.

To make these parfaits, you will need a silicone muffin tin as well as a dish or tray wide enough to hold the tin in the snow.

Recipe

Melt approximately 20 g of cooking chocolate per parfait.

Fill the dish with fresh snow, then place the silicone muffin tin in it, ensuring that the snow perfectly fits the contours of the molds up to the rim. This step allows the chocolate to harden quickly and form an even shell.

Using a spoon, generously coat the sides and then the bottom of the molds with the melted chocolate. Allow to harden for a few moments.

Then fill each mold with slightly softened ice cream. Chocolate, vanilla, coffee, or even a blend of flavors: all combinations are possible according to your preferences.

Place the tin in the freezer for at least one hour.

Melt more chocolate if necessary, then cover each parfait with a thin layer to seal the shell. Return to the freezer for several hours.

You can flambé the parfaits with alcohol. For this, choose a spirit with more than 40% alcohol by volume.

Warm it slightly, ignite it, and pour it over the unmolded parfait.

The final touch: the flambé

For an even more spectacular service, the parfaits can be flambéed just before tasting.
