He remembers the great discoveries of his youth, the Sauternes such as Ch\u00e2teau d'Yquem, the great Bordeaux and Burgundies that made an entire generation dream. At the time, Swiss wines still seemed discreet on the landscape. <\/p>\n\n
Today, perspectives have changed. He observes with interest the evolution of Valais wines, now capable of standing up to the great European references, without ever seeking to imitate them. <\/p>\n\n
No quest for rarity at all costs, nor a static collection. What matters is the moment and the people around the bottle. A fine discovery shared is worth more than a great name in isolation. <\/p>\n\n
