We had the pleasure of tasting his Risotto alla Nerano with him\u2014flavorful and creamy. A true delight!  <\/p>\n\n<h2 class=\"wp-block-heading\"><strong>Ingredient<\/strong><strong>s<\/strong><\/h2>\n\n<p class=\"wp-block-paragraph\"><strong><span style=\"font-size: 16px;\">Serves 4<\/span>:<\/strong><\/p>\n\n<ul class=\"wp-block-list\">\n<li>1 kg zucchini<\/li>\n\n\n\n<li>400 g carnaroli rice<\/li>\n\n\n\n<li>550 ml white wine<\/li>\n\n\n\n<li>120 g pecorino or caciocavallo<\/li>\n\n\n\n<li>80 g butter<\/li>\n\n\n\n<li>1 lemon<\/li>\n\n\n\n<li>10 g basil<\/li>\n\n\n\n<li>Sunflower oil<\/li>\n\n\n\n<li>Salt and pepper<\/li>\n<\/ul>\n\n<h2 class=\"wp-block-heading\"><strong>Recipe<\/strong><\/h2>\n\n<ul class=\"wp-block-list\">\n<li>Slice the zucchini thinly (2-3 millimeters) and fry in oil at 160 degrees until nicely colored (7-8 minutes). Set aside on absorbent paper. <\/li>\n\n\n\n<li>Heat the rice in a saucepan over medium heat (without fat) until it becomes pearly. Add white wine to cover and let reduce until dry. <\/li>\n\n\n\n<li>Add \u00be of the zucchini, then gradually add hot water or hot vegetable stock (the rice must be constantly covered). Cook for approximately 15 minutes. <\/li>\n\n\n\n<li>Remove from heat, add the butter, caciocavallo or pecorino, chopped basil and the zest of half a lemon.<\/li>\n\n\n\n<li>Adjust seasoning. Add a few drops of lemon if needed. <\/li>\n\n\n\n<li>Plate the risotto and garnish with the remaining zucchini. Finish with a turn of the pepper mill. <\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\"><strong>Chef's tip:<\/strong> the acidity from the white wine and lemon contrasts with the richness of the butter and cheese, bringing flavor and a delightful mouthfeel.<\/p>\n\n<p class=\"wp-block-paragraph\">To accompany this dish, we recommend a <a href=\"https:\/\/shop.famillerouvinez.com\/fr\/shop\/24-39-merlot-clos-st-marcel-aoc-valais.html#\/28-centilisation-75\" target=\"_blank\" rel=\"noopener\">Merlot from Clos St Marcel<\/a>.
